Overview: Pad Thai is a popular Thai street food dish consisting of stir-fried rice noodles with eggs, tofu, shrimp, and flavored with tamarind pulp, fish sauce, garlic, and chili pepper.
Ingredients:
- 8 oz rice noodles
- 2 tbsp tamarind paste
- 3 tbsp fish sauce
- 1 tbsp soy sauce
- 2 tbsp palm sugar
- 2 cloves garlic, minced
- 2 eggs, lightly beaten
- 8 oz shrimp, peeled and deveined
- 1 cup bean sprouts
- 1/4 cup chopped peanuts
- 2 green onions, chopped
- 1 lime, cut into wedges
- Fresh cilantro, for garnish
Nutrition:
- Calories: 320 kcal
- Protein: 20g
- Carbohydrates: 45g
- Fat: 10g
Instructions:
- Soak rice noodles in warm water for 30 minutes. Drain and set aside.
- In a small bowl, mix tamarind paste, fish sauce, soy sauce, and palm sugar. Set aside.
- Heat oil in a wok over medium-high heat. Add garlic and cook until fragrant.
- Add shrimp and cook until pink. Push to the side of the wok and add eggs. Scramble until cooked.
- Add drained noodles and sauce mixture. Stir-fry until noodles are tender.
- Add bean sprouts and green onions. Cook for an additional 2 minutes.
- Serve hot, garnished with peanuts, cilantro, and lime wedges.
