Ingredients

  • 1 pound chicken breast, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • Cooked rice, for serving
  • Sesame seeds, for garnish
  • Green onions, sliced (for garnish)

Instructions

1. Marinate Chicken:

  • In a medium bowl, combine the thinly sliced chicken, 2 tablespoons of soy sauce, and cornstarch. Mix well and let marinate for 15 minutes.

2. Prepare Sauce:

  • In a small bowl, whisk together the remaining soy sauce, hoisin sauce, oyster sauce, rice vinegar, and sesame oil. Set aside.

3. Cook Chicken:

  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until no longer pink, about 5-7 minutes. Remove the chicken from the skillet and set aside.

4. Cook Vegetables:

  • In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced bell peppers, broccoli florets, snap peas, minced garlic, and minced ginger. Stir fry for about 5 minutes until the vegetables are tender-crisp.

5. Combine:

  • Return the cooked chicken to the skillet and pour the sauce over the top. Stir to coat the chicken and vegetables in the sauce, cooking for an additional 2-3 minutes until everything is heated through.

6. Serve:

  • Serve the stir fry over cooked rice. Garnish with sesame seeds and sliced green onions.
