2. Season the Roast:

  • In a small bowl, combine the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper. Rub this mixture all over the prime rib roast.

3. Roast at High Temperature:

  • Place the roast on a rack in a roasting pan. Pour the beef broth into the bottom of the pan. Roast at 450°F (230°C) for 15 minutes to create a flavorful crust.

4. Reduce Heat and Continue Roasting:

  • Reduce the oven temperature to 325°F (165°C) and continue roasting for about 13-15 minutes per pound, or until the internal temperature reaches 120°F (49°C) for rare, 130°F (54°C) for medium-rare, or 140°F (60°C) for medium.

5. Rest the Meat:

  • Remove the roast from the oven and tent it with aluminum foil. Let it rest for at least 20 minutes before carving to allow the juices to redistribute.

6. Carve and Serve:

  • Carve the prime rib into slices and serve with your favorite sides.
