Instructions

  1. Prepare the Ingredients:

    • Freeze the ribeye steak for about 30 minutes to make it easier to slice thinly. Slice as thinly as possible.
  2. Cook the Onions (and Peppers):

    • Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the onions (and bell peppers, if using) and cook until softened and caramelized, about 10 minutes. Remove from skillet and set aside.
  3. Cook the Steak:

    • Heat the remaining oil in the skillet. Add the thinly sliced steak, season with salt and pepper, and cook until browned, about 2-3 minutes.
  4. Combine and Melt Cheese:

    • Return the cooked onions and peppers to the skillet with the steak. Place slices of provolone cheese on top and let it melt over the mixture.
  5. Assemble the Sandwiches:

    • Slice the hoagie rolls and fill each with the steak and cheese mixture.
  6. Serve:

    • Serve immediately with optional condiments like hot sauce or mayo.
