- Freeze the ribeye steak for about 30 minutes to make it easier to slice thinly. Slice as thinly as possible.

- Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the onions (and bell peppers, if using) and cook until softened and caramelized, about 10 minutes. Remove from skillet and set aside.

Cook the Steak:
- Heat the remaining oil in the skillet. Add the thinly sliced steak, season with salt and pepper, and cook until browned, about 2-3 minutes.

Combine and Melt Cheese:
- Return the cooked onions and peppers to the skillet with the steak. Place slices of provolone cheese on top and let it melt over the mixture.
