Overview: Pad Thai is a popular Thai street food dish consisting of stir-fried rice noodles with eggs, tofu, shrimp, and flavored with tamarind pulp, fish sauce, garlic, and chili pepper.

Ingredients:

  • 8 oz rice noodles
  • 2 tbsp tamarind paste
  • 3 tbsp fish sauce
  • 1 tbsp soy sauce
  • 2 tbsp palm sugar
  • 2 cloves garlic, minced
  • 2 eggs, lightly beaten
  • 8 oz shrimp, peeled and deveined
  • 1 cup bean sprouts
  • 1/4 cup chopped peanuts
  • 2 green onions, chopped
  • 1 lime, cut into wedges
  • Fresh cilantro, for garnish

Nutrition:

  • Calories: 320 kcal
  • Protein: 20g
  • Carbohydrates: 45g
  • Fat: 10g

Instructions:

  1. Soak rice noodles in warm water for 30 minutes. Drain and set aside.
  2. In a small bowl, mix tamarind paste, fish sauce, soy sauce, and palm sugar. Set aside.
  3. Heat oil in a wok over medium-high heat. Add garlic and cook until fragrant.
  4. Add shrimp and cook until pink. Push to the side of the wok and add eggs. Scramble until cooked.
  5. Add drained noodles and sauce mixture. Stir-fry until noodles are tender.
  6. Add bean sprouts and green onions. Cook for an additional 2 minutes.
  7. Serve hot, garnished with peanuts, cilantro, and lime wedges.
